The name says it all. So many superfoods all in one bar of complete and utter Ananda. Experiment with any seeds/nuts/superfoods and discover your favourite combination. Top Tip don’t experiment with anything that runs, i.e liquid. As my Mother says. You are perfect just as you are.

This is adapted and gratefully inspired by Abagail O’Neill’s Model Chocolate bible.

Glow Bars

Makes 12 small bars. Takes 10 mins plus freezing time

4 Tbsp soft raisins, chopped

4 Tbsp organic raw coconut oil, melted

3 Tbsp light tahini / nut butter

4 Ttbsp raw honey/brown rice syrup or 3 Tbsp Maple syrup

1½ tsp organic maca powder

2 Tbsp organic raw cacao powder

2 Tbsp ground flaxseed

3 Tbsp goji berries

3 Tbsp pumpkin seeds

2 Tbsp white/black sesame seeds

2 Tbsp raw almonds/walnuts/hazelnuts/cashew/macadamia nuts, chopped

2 Tbsp desiccated coconut ( I like to toast mine)

1 Tbsp chia seeds

4 drops doTerra wild orange oil* optional but phenomenal

2 tsp bee pollen* omit if vegan

Extra desiccated coconut / goji berries / pumpkin seeds / edible rose petals for decoration

Line a square glass dish with greaseproof paper. Add all ingredients to your high-speed blender/food processor and blitz until all are combined into one large mess. Your work is almost done. Press down the mixture creating an even layer.  Sprinkle the top with optional toppings. Pop into the freezer for at least two hours or until firm. Cut into larger bars or smaller squares. Smaller for your sister naturally. These keep perfectly in an airtight container in the freezer for 2 months. Likely. Turn off the lights. Go forth and glow in the dark with all that superfood prana.
